CMC as additive used in food industry. CMC has the functions of thickener, stabilizer, emulsifier, acid resisting, improving product taste and prolonging storage time, etc. It is widely used in yoghurt, ice cream, beverage, wine, jelly,jam, cookies, instant noodles, bakery products, meat products etc.

THE FUNCTION OF CMC IN THE FOOD INDUSTRY
1.Thickening: Increasing viscosity, and enhance the stability of food products
2.Water retention: Improve the water retention and freshness of food, and extend the shelf life of food.
3.Stability: stabilize protein, emulsification, prevent precipitation stratification, delay oil-water stratification.
